Slightly spicy, citrus salmon
This is one of my favorite, and super easy, recipes from the wonderful Alissa Segerston (you can find more of her recipes at wholelifenutrition.net)
Ingredients:

4 x single servings of wild Alaskan salmon fillets

1/2 cup freshly squeezed orange juice

1/4 cup freshly squeezed lime juice

1/4 cup freshly squeezed lemon juice

1/4 cup extra virgin olive oil
-
2 T minced shallots
-
1-2 garlic cloves, minced
-
1-2 tsp of sea salt
-
1/2 - 1 tsp of crushed red chili flakes
Directions:

Rinse the salmon fillets, and place them skin side up in a shallow baking dish.

Make the marinade (by whisking all other ingredients together).

Pour the marinate over the salmon and let it marinate in the fridge for 2-4 hours.

Pre-heat the oven to 400 F.

Drain, and dispose of, the marinade.

Flip the fish so the skin side is down.

Bake uncovered for 10 minutes per inch of thickness.

Alissa advises taking it out of the oven just before it's cooked through to avoid overcooking it...as it will continue to cook after you take it out of the oven.
