Terrific turkey burgers!

Every time I make these turkey burgers, I have a little laugh to myself thinking back to one of our first weekends after moving to California nearly 20 years ago. A new friend invited us to a BBQ and casually mentioned she’d be serving turkey burgers. Without missing a beat, my (also very Irish) husband said what I was only thinking: “Thanks, but I don’t eat diet food!!”
To be fair, I’d never had a turkey burger before either—and wasn’t in any rush to try one. But fast forward two decades, and here I am: fully converted. Turns out, turkey burgers can be incredibly delicious when made right.
Although my husband would still argue that the words “turkey” and “burger” don’t belong in the same sentence… I urge you to give these a try!
Ingredients:
- 1 T coconut oili
- 2 yellow onions, peeled & sliced into half moons
- 2 apples
- 1 lb lean ground turkey
- 2 tsp Dijon mustard
- 1/2 tsp ground sage
- 1/2 tsp dried thyme
- 1 tsp sea salt
- 1/4 tsp black pepper
Directions:
- Peel & slice onions into half-moons.
- Heat coconut oil in a frying pan over medium heat. Add yellow onion and saute for 30 minutes or until fried and crispy, stirring occasionally.
If/when onion bits get stuck to the bottom, add 1 to 2 tbsp of water at a time to deglaze the pan. Set aside. - Grate one of the apples into a bowl. Squeeze the grated apple slightly to remove extra juice...you don't need that liquid...so you can freeze it and use it in another recipe or discard it.
- In a mixing bowl, combine the turkey, shredded apple, dijon, sage, thyme, salt and pepper. Form into patties.
- Preheat grill over medium heat. Transfer burgers onto the grill and cook for about 7 to 8 minutes per side or until burger is cooked through and juices run clear. Remove from grill.
- Cut the remaining apple into slices. Plate burger over a bed of lettuce, apple slices and caramelized onion.
