Chia pudding
This is one of my favorite, go-to, chia pudding recipes...
Ingredients:

1 x 15 oz can of full-fat coconut milk
-
2 medium size bananas, peeled
-
1 tsp vanilla extract
-
1/2 tsp ground cinnamon
-
6 T chia seeds
-
Large flakes of unsweetened, desiccated coconut & sliced bananas are optional toppings
Directions:

In a blender, combine the coconut milk, bananas, vanilla and cinnamon - blend together until smooth.

Then add the chia seeds and either stir to combine or blend for a 2-3 seconds.
Note, if you'd prefer a smooth chia pudding then add the chia seeds from the beginning, i.e., with the coconut milk & bananas etc.
Also, if you prefer a more liquid consistency to your pudding then add a little water to this mixture. -
Refrigerate for at least 1 hr before enjoying!
Yield:

5 x 4 oz containers, which will keep in the fridge for ~2-3 days
