Chia pudding

Chia Pudding

This is one of my favorite, go-to, chia pudding recipes...

Ingredients:

  • 1 x 15 oz can of full-fat coconut milk

  • 2 medium size bananas, peeled

  • 1 tsp vanilla extract

  • 1/2 tsp ground cinnamon

  • 6 T chia seeds

  • Large flakes of unsweetened, desiccated coconut & sliced bananas are optional toppings

Directions:

  • In a blender, combine the coconut milk, bananas, vanilla and cinnamon - blend together until smooth.

  • Then add the chia seeds and either stir to combine or blend for a 2-3 seconds.
    Note, if you'd prefer a smooth chia pudding then add the chia seeds from the beginning, i.e., with the coconut milk & bananas etc.
    Also, if you prefer a more liquid consistency to your pudding then add a little water to this mixture.

  • Refrigerate for at least 1 hr before enjoying!

Yield:

  • 5 x 4 oz containers, which will keep in the fridge for ~2-3 days
