GFCF Waldorf salad

My GFCF Version of a Waldorf Salad

This is so easy, it almost isn't really a recipe at all, but I'm sharing it nonetheless...

Vinaigrette ingredients:

  • 1/4 cup apple cider vinegar

  • 1 T honey

  • 1 tsp sea salt

  • 1/4 tsp freshly ground black pepper

  • 1/3 cup your favorite extra virgin olive oil

Salad ingredients:

  • 1 medium apple (pink lady for the color!)

  • 3/4 cup walnuts, toasted & chopped

  • 1 medium bunch of parsley, finely chopped

  • 1-2 medium sized radicchio, washed and dried & roughly chopped

  • previously cooked turkey / chicken

Directions:

  • Make the dressing (and know whatever you don't use will keep in the fridge for up to 5 days)

  • Prep the salad ingredients and toss to combine

  • Enjoy!
