Sardine Salad with Lemon

This is one of those 'just throw it together' salads which isn't really worthy of a recipe at all but I'm sharing it nonetheless, as inspiration more than anything else...

Serves 1-2 people (depending on hunger levels)

Ingredients:

  • 2 T of your favorite extra virgin olive oil

  • 1 T lemon (preferably Meyer) zest

  • Juice of the same lemon

  • 1 tsp Dijon mustard

  • salt & pepper to taste

  • 1/2 a ~4 oz can of sardines (packed in olive oil, drained

  • leafy greens of choice (FYI - spinach / arugula are probably the best suited)

  • 2 stalks of celery, roughly diced

  • 4-5 red radishes, cut into half moons

  • 1/2 bunch of flat leafed parsley, washed, roughly dried & chopped

Directions:

  • Make the dressing by whisking the first 5 ingredients listed together, then set it aside.

  • Assemble/prep the other ingredients

  • Place all ingredients in a large bowl (in which you can toss the salad) and pour the dressing on top and toss to combine.
