Farmer's market breakfast
If your typical breakfast is quite high in starchy - albeit high fiber - carbohydrates and your energy drags in the afternoon, this is the sort of breakfast I'd recommend for conducting what I refer to as "the breakfast experiment"!
Just try eating this for breakfast one morning and notice how different you feel on that day. By eating a little protein, some healthy fats, and fiber rich crunchy vegetables you can program yourself to feel, and function, better throughout the day...
And, for anyone freaked out by the idea of having to 'cook' - please rest assured this is more of a collection of items thrown together than an actual recipe!
Ingredients:
-
4-5oz of smoked ahi tuna (or smoked fish of choice)
FYI, consuming tuna more than 1x every 2-3 wks is NOT recommended on account of it’s mercury content, but you can eat salmon, mackerel and other smaller fish on a regular basis. -
1 large handful of sugar snap peas, roughly chopped
-
½ small-medium cucumber, roughly chopped
-
1 handful of cherry tomatoes, halved
-
1-2 T extra virgin olive oil of choice
Directions:
-
Prep/chop ingredients as above
-
Dress with your favorite extra virgin olive oil
-
Enjoy! (preferably sitting down at a table, even if it's only for 10 minutes)
